Ingredients:

  • 2 tbsp olive oil
  • 1 lb (450g) ground beef (or ground turkey)
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 can (15 oz) diced tomatoes
  • 1 can (15 oz) tomato sauce
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup beef broth (or water)
  • 2 tbsp tomato paste
  • 1 tsp sugar (optional, to balance acidity)

Spices:

  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1/2 tsp oregano
  • 1/2 tsp black pepper
  • 1/2 tsp salt (adjust to taste)
  • 1/4 tsp cayenne pepper (optional, for heat)

Instructions:

Sauté the Aromatics:
Heat olive oil in a large pot over medium heat. Add diced onions and sauté for 3-4 minutes until softened. Stir in the minced garlic and cook for another 30 seconds.

Brown the Meat:
Add the ground beef (or turkey) and cook until browned, breaking it up as it cooks. Drain excess fat if necessary.

Add Tomatoes & Beans:
Stir in the diced tomatoes, tomato sauce, kidney beans, black beans, and tomato paste. Mix well.

Season & Simmer:
Add chili powder, cumin, smoked paprika, oregano, black pepper, salt, cayenne (if using), and sugar. Pour in beef broth and mix well.

Cook to Perfection:
Bring the chili to a boil, then reduce heat to low and let it simmer uncovered for at least 30 minutes (or up to 1 hour for deeper flavor), stirring occasionally.

Adjust & Serve:
Taste and adjust seasoning if needed. Serve hot with shredded cheese, sour cream, green onions, or cornbread on the side.

Tips for the Best Chili:

  • For extra flavor, let the chili sit for a few hours or overnight in the fridge before reheating.
  • Want it spicier? Add extra cayenne, jalapeños, or hot sauce.
  • Make it thicker? Simmer longer or mash some beans for a richer texture.
  • Vegetarian Option: Swap ground beef for lentils or extra beans.
